A couple days, at the most. Are you making the fondant yourself? Make sure you have band-aids on hand. My sister made homemade fondant once and she had huge blisters on her hands. There is a lot of stirring involved.
First, make the cake far enough in advance to allow it to cool thoroughly before adding the fondant to the outside. If you can allow 4-5 hours, that is best. Three hours at a minimum.


It doesn't HAVE to be refrigerated, but fondant does best when chilled. As long as it's covered with airtight wrap, it will not go stale in 2 days.
2 days will be fine! Just make sure you coat the entire cake well, let it set and store it in a cake tin or tupperware in the fridge. I usually put a layer of cling wrap over the tupperware before sealing it with the lid- it just stores it better. Yes you should refridgerate it, any number of things can happen while its sitting out. Make sure there is nothing stinky sitting close to it in the fridge or it will taste like that if its in there long enough!
