When making your own yogurt, how can you make it raspberry flavored?

I want to strain my raspberries and just use the juice, but at what point do I add it in? And do I need to add any sweetener? I would prefer something other than sugar, but definitely do NOT want Splenda or any other other similar substitute. THANK YOU!When making your own yogurt, how can you make it raspberry flavored?

The best time to flavor homemade yogurts is right before serving. Adding flavors before the fermentation will throw off the fermentation process and the yogurt may not solidify correctly.





Unfortunately the straight juice from raspberries will probably not be strong enough to adequately flavor your yogurt. The best way to intensify the raspberry flavor (while still using just the juice, obviously adding whole raspberries would be good for the flavor too) would be to collect the juice from the berries (frozen berries that have been thawed work really well for this) then reduce that juice by half in a small saucepan on the stove. The idea is to let some of the water in the juice evaporate, thus intensifying the raspberry flavor. For a sweetener, try adding some honey to the juice as it is reducing.





Also, try to keep the juice at a bare simmer, vigorous boiling may have a negative impact on the flavor.
Add it just before serving. If you want it sweeter, you have to use honey, or sugar, or sugar substitute like Splenda.





If you use fruit juice rather than fruit in your yogurt, remember it will get very runny, liquid-y, not as ';solid'; as real yogurt!
