To remove the skin, blanch in boiling water for one minute and then immediately plunge into cold water to cease the cooking process. The skin should easily slip off. Do not let them soak in the water.
scald the skin. It will peal right off!!!!!
I have tried using a spoon on 1/4's with some degree of success.
use a small sharp knife to cut a cross in the peach's skin, grab a corner between your knife and thumb and pull. if hte peach is ripe the skinn will just pull off.
